The group of food hygiene
In our intestines there is a large amount of bacteria that affects our health and immune system and its composition is affected by everything we eat. We are interested in the microorganisms that naturally exist on different foodstuffs and how they affect our health, seen from both a short and long term perspective.

How these bacteria interact with each other is for us an important research area. We want to identify harmless microorganisms that show antagonistic properties on pathogens. In this way we can protect foodstuffs, mainly raw vegetables, from establishment and spread of severe pathogens such as EHEC.

We also study how it is possible to stimulate the growth of beneficial bacteria through fermentation. These could for example have the ability to metabolize phenol compounds to bioactive compounds with anti-inflammatory effects.
