My research focuses on enzyme technology. Current research activities include:

  • Use of enzymes to tailor lipids with respect to physico-chemical properties and/or nutritional value.
  • Production of prebiotic food ingredients by enzymatic modification of carbohydrates.
  • Enzymatic synthesis of carbohydrate-based surfactants.
  • Processing of oats.
  • Enzymatic reactions in organic media.
