Potatoes are considered as a staple food in Sweden, and is served as lunch in school several times per week. Unfortunately is the quality of boiled potatoes often poor, which can be seen as a watery center in combination with a tough and rubbery surface. This has been a problem for decades, but still no complete explanation or solution is available. The aim with this project is to improve the quality of potatoes served at Swedish schools, but with remained efficiancy of the cantines.
