Forskning
Food and nutrition scientist with over 15 years of international experience in research, teaching, and program leadership, with a focus on sustainable food systems. My research explores the intersection of nutrition, bioactive compounds, and fermentation, particularly within the context of plant-based diets and their role in promoting health and environmental sustainability. I investigate how food processing and formulation influence the nutritional quality and sensory properties of foods, aiming to enhance their acceptability and impact through evidence-based strategies. With experience across Europe and developing countries, I contribute to interdisciplinary projects that bridge science, industry, and education to support healthier, more sustainable dietary patterns.
